Food Choice Series with Robin Matathias – Whole Food and Fiber (Class #1 of 5)

This class will focus on eating whole foods, identifying processed foods, and incorporating more fiber in the diet by making simple changes in our daily food choices. We will also read and interpret ingredient labels. (Bring in your own food labels for us to decipher!) In the Brattleboro Food Co-op Cooking Classroom, Canal St. entrance. This is a series of classes which explores the connection between our food choices, food production systems, and their impacts on both human and environmental health. Each day we make decisions about what to eat, and this simple daily act can have profound outcomes. These classes will teach you which food choices can lead to optimal human health, while having the least environmental impact. Learn how to evaluate water use, land requirements, energy use, and waste production to assess the ecological footprint and sustainability of our daily food–consumption decisions. We will also sample many delicious foods!
