#1 Whole Food and Fiber: Learn how the human body acts like an ecosystem and how imbalances can make us sick. Discover how to prevent the top killers in the US through diet and lifestyle changes. This lesson will focus on eating whole foods, identifying processed foods, and incorporating more fiber in the diet by making simple changes in our daily food choices. We will also read and interpret ingredient labels. (Bring in food labels!)

Food Choice Series: A 5 part program (Take 1 or all 5) offered by Robin Matathias, in January and February. Join Robin Matathias, Adjunct Professor of Environmental Studies at Keene State College, for a series of classes that will explore the connection between food choices, food production systems, and their impacts on both human and environmental health. Our problems can seem overwhelming and unsolvable at times, but each day we make decisions about what to eat, and this simple daily act can have profound outcomes. These classes will teach you which food choices can lead to optimal human health, while having the least environmental impact. Learn how to evaluate water use, land requirements, energy use, and waste production to assess the ecological footprint and sustainability of our daily food–consumption decisions. We will also sample many delicious foods!
