Kids in this class are going to make warm, sweet-and-savory cabbage rolls. We’ll stuff cabbage leaves with rice, herbs and spices before braising them. No matter the age or experience, every child will take part in the making of this traditional dish. At the request of Co-op kids everywhere… here is a pizza-making class just for fun! Join Lizi to make pizza dough from scratch and top it with flavors inspired by the season: roasted pumpkin, spices and cheese. Let’s celebrate Kale, the Vermont Harvest of the Month, by learning how to make Chinese dumplings. These savory and flavorful morsels are a popular snack with kids all over China, either filled with meat, vegetables or tofu. We will make kale and tofu dumplings while learning about the culture and language of the vast country of China.  In the Brattleboro Food Co-op Cooking Classroom, 7 Canal St. entrance.

Fun Foods from Around the World: Portugal

Caldo Verdé is a traditional Portuguese soup and the star dish on our culinary journey to Portugal this month. We will make this soup which calls for sausage, potatoes, cabbage and Swiss chard (the Vermont Harvest of the Month vegetable). Don’t worry, we will make a vegetarian version as well, so everyone can enjoy this delicious soup. In this class we will use the Vermont Harvest of the Month: Cabbage, to make traditional Rice Paper Rolls. These veggie-filled packages are a popular street food in Vietnam and eaten by kids as a snack. We will learn about the culture and language of this wondrous Asian country as well.
